Avocados are known to be great for brain health. Sweet potatoes are a super food with so many health benefits with having a good supply of Vitamin A, Vitamin C, manganese, potassium, Vitamin B6, high in fiber and are rich in antioxidants.

This recipe is packed with healthy ingredients, easy to make and delicious! I encourage you to keep as many of the healthy ingredients as you can and add some of your own to make the recipe your own creation

Ingredients

4 medium sweet potatoes
1 tbsp. extra virgin coconut oil
1 large brown onion, finely chopped
4 cloves of garlic, minced
1 tsp. ground cumin
1/4 tsp. ground coriander or a bunch of fresh cilantro 
1 x 400 g can black beans, drained or if you want to soak dried beans then use

1 x 200 g can of sweet corn, optional

1 pinch of hot or mild chilli powder
1 pinch of ground turmeric
1 pinch of ancho chilli flakes
1 pinch of crushed chillies
2 pinches of cayenne pepper
2 shakes of Lea & perrins

Salsa

1 cup of cherry tomatoes, quartered
1/2 small red onion, finely diced
Olive oil to taste
Add juice of 1 fresh lime
Sea salt and black pepper
Cayenne pepper
2 cloves garlic, minced
1/2 handful of fresh cilantro
1 ripe avocado, chopped chunky

Instructions

Start by preheating an air fryer or oven to 356 degrees Fahrenheit. Once it is heated, it’s optional to wrap the potatoes in foil to make them cook faster, then place on a baking tray in the oven. I enjoy using the airfryer for this step for several reasons. You want to check them at around 40 minutes to see if they are soft in the middle, if not cook for an hour.

While the potatoes are cooking you move onto making the filling. You want to start by gently warming the coconut oil in the frying pan and add the onions. Saute over low to medium heat until onions are soft, then you add the garlic and stir until the onions caramelize.

I also add the seasoning at this time which really brings out the seasonings by making them pop in flavor. Stir in cumin, coriander, ground turmeric, crushed chillies, ancho chilli flakes, hot chilli powder, cayenne pepper, lea & perrins and black beans. Once this step is completed, move it off the stove.

If it’s too spicy you can eliminate some of the chilli pepper ingredients. They do say Cayenne does help to stimulate the blood and can be your friend to help fire up your metabolism as well as making you feel fuller after eating.

Salsa preparation is combining those ingredients in a good size bowl just in case you get an inspiration to add some of your own healthy ingredients. I personally like to put my own twist on recipes because I enjoy a lot of flavor. If it’s too spicy or you hate a particular ingredient, leave it out.

Once the sweet potatoes are finished and cool enough to remove the foil, then cut them lengthways to create your opening and fill each one with salsa. Put some sea salt and pepper and any other seasoning for your personal preference and enjoy!
